For over 20 years, since its opening in 2004, the Sarov Technopark has had a cafeteria. It employs wonderful chefs who know how to cook delicious food. But the time came when they wanted to update its interiors and create a modern and cozy space where visitors could enjoy not just shoveling food down their throats, but also sitting, savoring, drinking a cup of coffee, thinking, chatting, and relaxing. The Sarov Technopark team also wanted to offer visitors a new, unique menu.
And the pretext for such a transformation was found—namely, the announcement by the Rosatom State Corporation of a project competition called «Atoms of Taste.»

Now it seems that the repairs went quickly and without a hitch.
But the result was what was expected.
The overall idea for transforming a typical cafeteria was inspired by life, the proximity to the history of the Atomic Project, the development of the National Center for Physics and Mathematics, and the student campus of the Sarov branch of Moscow State University. The decision was made to introduce visitors to the taste preferences of the founders of the Atomic Project with the new menu, while incorporating modern technology. It was also decided to offer visitors the favorite dishes of the new generation of scientists and future scientists. Thus, four new dishes were born:

Curciotto with pork rinds and kvass espuma

One of Igor Vasilyevich Kurchatov’s favorite dishes.
According to his memoirs, he loved buckwheat porridge with cracklings. Curciotto has his own culinary secrets. Those who have tried it have given the dish excellent marks.

ЮБ-1.13.51

Yuli Borisovich Khariton considered potato zrazy with mushrooms a festive dish. The uniqueness of our dish is that it is entirely made
with local ingredients. There are several large potato producers in the Nizhny Novgorod region, and mushrooms literally surround the Sarov Technopark on all sides. The historical component of our dish is hidden in its name: YB (Yuli Borisovich) is the initials used by great physicists to address each other during the creation of the atomic bomb. 1.13.51 is the classifier
of potatoes in the economic food classification system. The dish combines several flavors and textures.

Item 550 — Apple Chutney

This dish is one of the favorites of Maxim Vyalkov, a graduate student at the Moscow State University branch in Sarov and a future nuclear scientist. He’s already on the Forbes «30 Under 30» list of the most promising young Russians. The main ingredient in this dish is apple. It’s the same apple from the tree that Maxim Vyalkov, a future scientist, planted as a first-year master’s student at Moscow State University in Sarov..
Taste of Atom — Barberry and Dogwood Sorbet
A favorite dish of students at the Sarov Quantorium Children’s Technopark is barberry and dogwood sorbet.
I wanted to create a dish that would appeal to the youngest generation of future scientists. And here’s a favorite dish of the students at the Quantorium Children’s Technology Park. Using food-grade candurin, we created a sorbet that resembles nuclear fuel on the outside and is brightly colored on the inside. Barberry is a berry often found on the streets of Sarov, and dogwood grows in the Nizhny Novgorod region.
It’s a delicious dish.
The renovations are complete, the furniture has been updated, and the dining room has become a cozy café with a thoughtful interior that connects history with the present day. And don’t forget to check out the menu. Enjoy your meal!
